Pumpkin Dip.

My friend, Michelle over at Yount Happenings , posted this really yummy fall pumpkin dip the other day! I made it last night and it was DELICIOUS! My co-workers are loving it and my twitter friends are wanting to the recipe so here you go!!




Pumpkin Dip:

2 cups powdered sugar
2 8-ounce packages cream cheese
1 can pumpkin puree
1 teaspoon cinnamon
1 teaspoon pumpkin pie spice
2 cups Cool Whip

Beat softened cream cheese until light and fluffy. Stir in powdered sugar and blend well. Add pumpkin, cinnamon, and pumpkin pie spice and blend well. Fold in Cool Whip. Chill and serve. You can serve it in a cue bowl along with vanilla wafers, ginger snap cookies, graham crackers or whatever sounds yummy to you!

Awesome Saturday!

Here are the highlights from an awesome Saturday with my mom!!

First we shopped, shopped and shopped! I.O. Metro store and their outlet, T.J.Max, Target, Warren's shoes, Francesca's, Bath and Body Works, Victoria Secret, and Sephora... Whew! I think I named them all! Speaking of Sephora...

I got some Tan Towels!! I can't wait to try these. I will let ya know how they work!


We ended our afternoon with a trip to BLISS Cupcakes Cafe!

I got one of these... Marshmellow Brownie.

And I one of these... Confetti Funfetti!

This place is DELICIOUS! And the scary part is, it is about a block from my Salon! I am already looking forward to returning back for more cupcakes!



For dinner, my Dad grilled hamburgers! While in NYC, mom and I ate this amazing spicy corn. I searched online for the recipe and found one that I think it pretty similar. So I made it to go with the burgers and it was really good!

Wanted to share the recipe with you just in case you might love corn and spice as much as I do! :)

  • Mexican style (Spicy) Corn on the cob
  • 4 ears corn on the cob, husked
  • mayonnaise
  • shredded parmesan cheese
  • cayenne pepper, depends on how hot you like it (to taste)
  • 1 piece bread (this is for ease of putting mayo on corn)

Directions

  1. 1
    Roast the corn on a charcoal grill just until tender and you have nice grill marks.

    Liberally spread mayo on piece of bread.
  3. 3
    Roll hot ears on the bread.
  4. 4
    Sprinkle parmesan cheese on.
  5. 5
    Sprinkle cayenne pepper on (to taste).
I hate that I didn't get to see my mom on Mother's Day. But we had such a great time today so we are just making this her Mother's Day! :)

Yummy!

Lots of you have kiddos and when I saw this in the Taste of Home: Simple & Delicious magazine, I just had to share! I thought this was just so cute and I am tempted to make it for myself! ha!



  • 12 Servings
  • Prep: 30 min. Bake: 25 min. + cooling

Ingredients

  • 1 package (18-1/4 ounces) white cake mix
  • 1 can (16 ounces) vanilla frosting
  • Nerds candies
  • Miniature chocolate cream-filled chocolate sandwich cookies
  • Frosted animal crackers
  • Miniature marshmallows
  • Cotton candy
  • Lollipops

Directions

  • Prepare and bake cake according to package directions, using two greased 9-in. round baking pans. Cool for 10 minutes before removing from pans to wire racks to cool completely.
  • Spread frosting between layers and over top and sides of cake. Lightly press the Nerds, sandwich cookies and animal crackers onto sides of cake. Arrange marshmallows along edge of cake. Just before serving, arrange cotton candy and lollipops on top of cake. Yield: 12 servings.


I also want to try these... FUDGY BROWNIES!!



  • 30 Servings
  • Prep: 15 min. + chilling Bake: 25 min. + cooling

Ingredients

  • 1 package fudge brownie mix (13-inch x 9-inch pan size)
  • 1-1/2 cups confectioners' sugar
  • 1/2 cup butter, softened
  • 2 to 3 tablespoons peanut butter
  • 2 tablespoons cold 2% milk
  • 4-1/2 teaspoons instant vanilla pudding mix
  • 1 can (16 ounces) chocolate fudge frosting

Directions

  • Prepare and bake brownies according to package directions. Cool on a wire rack.
  • Meanwhile, in a small bowl, beat the confectioners' sugar, butter, peanut butter, milk and pudding mix until smooth. Spread over brownies. Cover and refrigerate for 30 minutes or until firm. Frost with chocolate fudge frosting just before cutting. Yield: 2-1/2 dozen.

A recipe for you!

I don't cook a whole lot due to our work schedules but when I do, I always cook out of my Third Street Baptist church cookbook!! (TSBC is in Arkadelphia and was my home church until we moved to Fayetteville.) It is a very good cook book with simple and easy reciepes from many people that I actually know. So when I got married, I was supposed to have gotten one. Well I didn't! And can you believe that no one would give theirs up for me?! Here I am a new wife and not even my own mother or mother-in-law would give theirs up!! They said they loved me a lot but that they could give up their trusty cookbook! :)

So... I went to visit my cousins in Tennessee for Thanksgiving almost a year after I got married. When I saw "the book" in her kitchen I screamed with joy and begged her to please let me have hers! haha! Obviously she loved me more than my own mom and mil because she let me take hers home with me. She does have by far the most cook books of anyone I know so I think she is doing ok without it. But I sure love my sweet cousin Deborah for letting me have her TSBC cookbook!
(Shout out to my cousins, the Milams, in Dickson, TN who are some of my faithful readers! I love ya'll!)

Anyway... The point of this post was to share a recipe from the cookbook! One of my favorite casseroles is Mexican Chicken. It is delicious and is even better as a leftover! And that is coming from someone that doesn't eat leftovers!

Mexican Chicken

3-4 chicken breast (I use boneless)
1 small chopped onion
1lb. Velveeta cheese
1 can ro-tel
1 can of cream of mushroom
1 can of cream of chicken soup
1 pkg. Doritos

Boil chicken until done. Shred chicken and place in 13x9 baking dish. Slice cheese and place as next layer. Break up Doritos into crumbling pieces. Place half of bag as next layer. Mix Ro-Tel and soups together. Add as next layer. Spread remaining Doritos as top layer. Bake at 350 for 45 min.


Here is the finished product!! You may have had this before or maybe yours is a little different but it is just so yummy that I hope you all make it and enjoy! I am always needing simple recipes that can be made in about 30 mins so if you have a favorite please email me or leave me a comment! I will be sure to make it and let you know what I think of it!

Showering Cole Muckleroy

This past Sunday, I helped throw a shower for one of my best friends from OBU. Emily had Cole in April so it was so fun because he was there at the shower for us to all hold! Everyone fell in love with him. He was super sweet the whole time. I can't wait to get to see Emily and Cole again!!

Of course the cute cake is from Ricks!

Emily moved to Texas so we had to make sure he knows what team to root for! :)

Blakely White was such a doll! So good to finally get to see her in person as well as her momma, Whitney!

We had this coffee punch at the shower and it was DELICIOUS!! I got it from my new sis-in-law and I thought I would share the goodness with all of you!

Ingredients:
1/4 cup instant coffee granules
1/2 cup chocolate syrup
1/4 cup sugar
1 1/2 cup boiling water
2 cups half and half
1 quart vanilla ice cream
2 cups ginger ale chilled

Directions:
Stir together first four ingredients in a large pitcher. Cool. Cover and chill at least 8 hours. Stir together coffee mixture, half and half, and ice cream in a punch bowl and pour in ginger ale.
Top with softened ice cream and chocolate swirls (optional)
